Vegan Patacón Sandwich (Jíbarito)

Bun-less burgers? Yes, but I promise they slap! Crunchy tostones/patacones and Beyond Meat join forces to create delicious and vegan (beef) patacon sandwiches. This plant-based recipe will slap your taste buds!

Serving: makes 2 sandwiches

Ingredients

4 plantains

2 Beyond Meat patties (1/2 lb)

2-3 tbsp sofrito

4 crushed garlic cloves (2 for patties, 2 for mayo-ketchup sauce)

1 tsp Dominican oregano

1/4 tsp paprika

1/2 tsp low sodium soy sauce (I used Trader Joe’s)

1/4 tsp liquid smoke

For sandwich assembly

Few slices of purple onion ~1/4 cup (a handful) of spinach, cabbage (lettuce replacement)

1 tomato (at least 4 slices needed)

Mayo-ketchup sauce ingredients

4 tbsp ketchup 4 tbsp mayo (vegan Hellmans is my fave)

1 tbsp chopped cilantro and 2 (previously mentioned) garlic cloves

A few sprigs of cilantro (take harder ends and add to the Beyond Meat patties)

Few dashes of hot sauce

Steps

1. Get all ingredients prepped/together.

2. Make mayo-ketchup sauce. Set aside.

3. Mix v-beef ingredients, portion into halves, form and cook patties until they’re golden brown on both sides. (You could cook at the same time as plantains, but it might be difficult for some people, and for filming purposes, it was easiest for me to cook one thing at a time.)

4. Peel and cut plantains. Fry them once, then flatten. Next, fry them a second time until golden brown.

5. Assemble sandwiches -Spread mayo-ketchup on each patacón -Add v-beef patty, then: two slices of tomato, spinach/lettuce/cabbage, onion, a bit more sauce (optional: slice of cheese)

6. Accompany your sandwich with a beer, some tropical guava nectar, or whatever floats your boat!

*Cook patties: Medium-low heat, 3-5min on each side or until golden brown
