Vegan Tofu Ricotta

Creamy and flavorful recipe for vegan ricotta! Perfect for making stuffed shells.

Servings: This makes *almost* enough for stuffing for a (12 oz) box of shells.

Ingredients

1 block extra firm tofu  

½  block firm tofu 

4 (small/medium) garlic cloves 

½  tsp garlic powder 

Juice ½ lemon 

2 tbsp nutritional yeast 

1 tsp dried basil

½ cup fresh basil 

½ tsp black pepper 

1 tsp salt (or to taste)

Instructions

Blend all ingredients in a food processor. If you don't have one, you can probably use a blender.

Notes

I think the firm/extra firm tofu ratio is key for the ideal texture.
